Free Range Duck Pancetta Carbonara

If you’re looking for a quick and easy meal, packed full of flavour, then why not try our recipe for our free-range duck pancetta carbonara, it only takes 15 minutes to cook and could be the perfect solution for you. 

Serves 4

  • 100g Somerset Charcuterie free range duck pancetta (I use 200g, as the pancetta is so delicious!)
  • 100g grated parmesan cheese
  • 3 large free-range eggs
  • 350g spaghetti
  • 2 large garlic cloves, peeled but kept whole
  • 50g butter
  • Freshly ground black pepper and sea-salt


  1. Bring a large pan of water to the boil
  2. Beat the eggs and parmesan cheese together in a mixing bowl, and season with pepper and salt
  3. Add a teaspoon of salt to the boiling water, and bring back to the boil, add the pasta, and cook for 10-12 minutes
  4. Place the blade of large knife over the garlic gently press (do not squash it flat!)
  5. Heat a large frying pan and add the butter, once the butter has melted, add the pancetta and garlic.
  6. Stir until the pancetta is golden and crispy, then carefully remove the garlic, reduce the heat on the frying pan to its lowest setting
  7. When the spaghetti is approximately 1 minute from being cooked, remove the frying pan from the heat.
  8. When the spaghetti is cooked, remove it from the pan with tongs and add to the pancetta in the frying pan (do not add the frying pan back to the heat!)
  9. Quickly add the egg and parmesan mixture to the frying pan, and use the tongs to mix the spaghetti, carbonara and egg mixture together.
  10. If the mixture is too thick, add a small amount of the water from the spaghetti pan to loosen it up.
  11. Serve in pasta bowls with a sprinkling of parmesan cheese and grated black pepper
