Somerset Cider Sausage Casserole

Arguably nothing sums up the beauty of local Somerset produce than its deliciously refreshing cider. Cider not only makes for a thirst-quenching drink, but it also has adds flavour to many recipes. Sausage casserole is one of our family’s favourite meals, so at Brambles we thought we would share our recipe so it could hopefully become one of your favourites too!

  • 1 tablespoon of sunflower oil for frying
  • 500g premium pork sausages
  • 1 large onion peeled and roughly chopped
  • 2 celery sticks, washed and roughly chopped
  • 2 medium carrots, peeled, and diced
  • 2 tablespoons plain flour
  • 500 ml fine Somerset cider
  • 150ml beef stock (a stock cube is fine)
  • 1 bouquet garni
  • Freshly ground black pepper
  • Sea salt


  1. Grill sausages until lightly browned all over – leave to cool
  2. Heat the oil in a medium to large saucepan, and add the onions, celery, and carrots. Fry gently until softened, stirring frequently.
  3. Slowly add the flour and stir continuously for 2 minutes
  4. Pour in the cider, and mix thoroughly, then add the beef stock
  5. Cut the sausages in to good chunks and add to the casserole
  6. Add the bouquet garni, and season with salt and pepper to your taste
  7. Cover the casserole and leave to cook on a low heat for 45 minutes, stirring occasionally
  8. Remove the bouquet garni and serve with potatoes of your choice. Mash works well, but I love crispy roast potatoes too!
